Taco Casserole
Ingredients
3 lbs ground beef
32 oz refried beans
16 oz Thick and Chunky Salsa
2 packages of Taco Seasoning Mix
2 1/2 cups tortilla chips, broken
3/4 cup green bell pepper, chopped
1/4 cup green onion, chopped
2 cups Cheddar Cheese, shredded
Instructions
Preheat oven to 375 F. In a large stockpot, brown ground beef and drain. Return beef to pot, then add refried beans, salsa and taco seasonings. Reduce to medium heat and stir occasionally until well mixed and softened. In an ungreased 9 x 13 inch baking pan, layer half of the beef and bean mixture. Sprinkle half of the peppers, onions and cheese on top of the beef mixture. Add the remaining beef and bean mixture to the dish, spreading it evenly over the top. Layer remaining peppers, onion and cheese over the casserole. Sprinkle broken chips over the casserole and cook uncovered for 20 to 30 minutes or until cheese is melted and chips are crisp. Makes 12 servings.
