S'mores Poke Cake
This is a fun cake to make, but our white cake was a little dry. It tasted fine and the flavors are all there, but I just think it can be better.
Ingredients
1 white cake mix, prepared according to package directions
14 regular size marshmallows
1 cup chocolate chips
1 tablespoon butter
14 oz can sweetened condensed milk, divided
16 oz cream cheese, softened
1/2 cup powdered sugar
2 tablespoons unsweetened cocoa powder
1 cup heavy whipping cream
Graham Crackers, Hershey's Chocolate Bars, and mini marshmallows to garnish
Instructions
Bake cake according to package instructions and allow to partially cool on a wire rack. Poke holes in the cake with the end of a wooden spoon. Melt chocolate chips with marshmallows and butter in a heavy saucepan over low heat stirring constantly. Stir in 3/4 cup milk, and blend thoroughly. Pour over the top of the cake, spreading around with a spatula to push the mix into the holes. For the next layer, blend cream cheese, powdered sugar, and cocoa powder with a mixer until smooth. Add the remaining milk and heavy whipping cream to the cream cheese, mixing to incorporate. Spread the chocolate cheesecake layer over the marshmallow layer. Refrigerate for at least an hour. Garnish with graham crackers, chocolate bars, and marshmallows prior to serving. Makes 24 servings.
