Chess Cake
Ingredients
1 package of yellow or butter cake mix
4 eggs, divided
1/2 cup butter, melted
8 ounces cream cheese, softened
1 pound confectioners’ sugar
1 teaspoon vanilla
Instructions
Preheat oven to 350 F and grease and flour a 9x13 inch cake pan. In a medium bowl, combine cake mix, 1 egg, and melted butter. Mix until crumbly. Press into the bottom of the prepared cake pan. In a mixing bowl, add 3 eggs to cream cheese and beat at medium speed until smooth. Add confectioners’ sugar and vanilla to cream cheese mixture, and continue to blend until smooth. Pour over cake layer. Bake for 35 to 40 minutes or until set. Cool on a wire rack, then cover with foil and chill in the refrigerator before cutting. Makes 20 servings.
