Orange Spice Carrots
Ingredients
2 pounds of carrots, peeled and cut into one-inch lengths
1/2 cup brown sugar
1/2 cup orange juice
2 tablespoons butter
3/4 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
4 teaspoons cornstarch
1/4 cup cold water
Instructions
In a slow cooker, combine carrots, sugar, orange juice, butter, cinnamon, salt, and nutmeg. Cover and cook on low for 5-6 hours or until carrots are tender. In a small bowl, mix cornstarch and water, stirring until smooth. Gradually stir into carrot mixture until sauce is thickened, about 1-2 minutes. Makes 8 servings.
