Peanut Butter & Jelly Muffins
A dense muffin that is palatable. Use cupcake liners for the muffins.
Ingredients
2 cups flour
1 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup peanut butter
1 egg
1 cup milk
12 teaspoons jelly
Instructions
Preheat oven to 350 F. Line 12 muffin tins with paper liners. Stir together the flour, sugar, baking powder and salt. Add peanut butter to the mixture cutting it into the flour with a fork until mixed and crumbly. Combine the egg and milk, then blend it in with the peanut butter mixture, folding it in just until moistened. Fill the bottom of each paper liner with the peanut butter mixture. Place a teaspoon of jelly in each muffin tin, and then top each muffin with the remaining peanut butter batter. Bake for 30 minutes or until done. Makes 12 servings.
