Roasted Maple Butter Carrots
Dry the carrots thoroughly because the excess water makes a mess. Had to pour extra syrup and butter into pan to give the carrots some flavor because the listed ingredients are just not enough.
Ingredients
2 pounds baby carrots
1 1/2 tablespoon olive oil
1/2 teaspoon salt
1 tablespoon butter
1 tablespoon Maple Syrup
salt and pepper
Instructions
Preheat oven to 475 F. Thoroughly pat baby carrots dry with paper towels, then toss with olive oil and salt. Spread carrots in single layer on a rimmed baking sheet. Roast for 10 minutes. Melt butter in a small saucepan over medium heat until deeply golden, about 1 minutes, the stir in syrup. Pour butter mixture over carrots and continue to roast for another 8 minutes or until carrots are browned and tender. Season with salt and pepper to taste. Makes 8 servings.
