Mexican Spoon Bread
Ingredients
1 can cream style corn
1 cup cornmeal
1/3 cup shortening, melted
2 large eggs, beaten
1/2 teaspoon baking soda
1 teaspoon salt
4 oz can green chili peppers, chopped
1 1/3 cup Cheddar Cheese, grated and divided
Instructions
Preheat oven to 400 F. Mix corn, cornmeal, shortening, eggs, baking soda and salt in large mixing bowl. Pour 1/2 batter in greased 9x9x2 inch pan. Sprinkle chilies and 1/2 of cheese on top of batter. Pour rest of batter on top and then sprinkle with remaining cheese. Bake for 45 minutes. Makes 12 servings.
