Shrimp, Peppers and Cheese Grits
Ingredients
1/4 cup bacon bits
1 cup red bell pepper, chopped
1 cup green bell pepper, chopped
10 oz can Ro-Tel tomatoes
1 1/2 pounds large shrimp, peeled and deveined
1/2 cup green onions, chopped
1 2/3 cup milk
16 oz chicken broth
1 cup uncooked quick cooking grits
1 cup cheddar cheese, shredded
Instructions
Cook bacon in a skillet over medium heat for 3 minutes or until lightly browned, stirring frequently. Add bell peppers, cook 10 minutes, stirring occasionally. Add tomatoes and cook 5 minutes. Add shrimp and cook 3 minutes. Stir in green onions and keep warm. Combine milk and broth in a saucepan. Bring to a boil and stir in grits. Reduce heat and cook for 5 minutes or until thick, stirring occasionally. Stir cheese into grits. Serve shrimp mixture over grits. Makes 4 servings.
