Ham Quesadillas
Ingredients
2 cups ham, shaved
8 ounce can corn, drained
2 teaspoons chili powder
2 cups Cheddar Cheese, shredded
8 flour tortillas
Instructions
In a large bowl, combine ham, corn, chili powder and cheese. Heat 10 inch nonstick skillet or griddle over medium high heat. Place one flour tortilla in skillet, layer with 1/2 cup of the ham mixture to within 1/2 inch of the edge of the tortilla. Top with another tortilla. Cook for 2 to 3 minutes then turn over, cooking an additional 2 to 3 minutes or until tortilla is golden brown. Remove from skillet and keep warm. Repeat with remaining tortillas and ham mixture. Cut each quesadilla into quarters and serve. Makes 4 servings.
