Fully Loaded Baked Potato Casserole
Ingredients
8 medium potatoes, peeled and cut into quarters
1/2 cup cream cheese
1/2 cup sour cream
1/4 cup butter
1/4 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups shredded cheddar cheese, divided
8 slices bacon, cooked, chopped and divided
1/2 bunch green onions, sliced
Instructions
Preheat oven to 375 F. Place potatoes in a saucepan and cover with salted water. Bring to a boil over medium high heat. Cook until tender, about 20 to 25 minutes, and then drain. Transfer potatoes to a mixing bowl, and mash until almost smooth. Add cream cheese, sour cream, butter, milk, salt and pepper. Continue stirring until smooth. Stir in 1 cup of cheese and half of the bacon. Spoon mixture evenly into a lightly oiled 3 quart casserole dish. Bake for 20 minutes. Top with remaining cheese, bacon and green onions. Bake for 5 minutes more to melt cheese and serve immediately. Makes 8 servings.
