Cherry Cream Cheese Tarts
Ingredients
16 ounces cream cheese, softened
1 cup sugar
1 teaspoon vanilla
2 eggs
12 vanilla wafers
1 can cherry pie filling
Instructions
Preheat oven to 350 F. Place a cupcake liner in each cup of a muffin pan, and lay a vanilla wafer, flat side down, in each muffin cup. Beat cream cheese with a mixer until fluffy. Add sugar and vanilla to cream cheese, beating well. Add eggs, one at a time, beating well after each addition. Spoon cream cheese mixture over wafers. Bake for 20 minutes. Allow tarts to cool completely. Store in refrigerator until ready to serve, then place cherry filling on top. Can also use another pie filling of your choice. Makes 12 servings.
