Cheesy Cornbread Casserole
Ingredients
1 lb ground beef
1 onion, chopped
1 jalapeno pepper, seeded and finely chopped
15 oz can enchilada sauce
15 oz can black beans, drained
1 teaspoon garlic powder
1 teaspoon ground cumin
8.5 oz package corn muffin mix
8 oz Mexican Style Cheese, shredded
Instructions
Preheat oven to 350 F. Brown meat with onions and peppers in large skillet. Stir in sauce, black beans, garlic powder and ground cumin. Cook and stir for five minutes or until heated through. Spoon into 13 x 9 inch baking dish. Prepare muffin batter as directed on package. Stir cheese into muffin batter, then spread over meat mixture. Bake for 20 minutes or until toothpick inserted in center of topping comes out clean. Cool slightly. Makes 8 servings.
