Leftover Enchiladas
Ingredients
1 pound leftover chicken, turkey, beef or pork
1 envelope taco seasoning mix
1 cup water
2 cups shredded cheddar cheese
8 flour tortillas
1/2 cup milk
Instructions
Preheat oven to 350 F. Dice leftover meat and place in a sauce pan. Add taco mix and water to the meat. Saute covered over low heat until meat just falls apart. Spoon meat onto a tortilla, sprinkle cheese over the mixture and roll up to seal. Place in greased 9x13 inch baking dish seam side down. Repeat with rest of tortillas. Sprinkle milk over tortillas to keep soft, then cover with remaining cheese. Bake for 25-30 minutes. Can be served with sour cream or avocado dip. Makes 4 servings.
