Banana Bread
The first time I baked this bread, the top browned entirely too much and it looked like a square brick. Watch this bread to make sure it does not burn.
Ingredients
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup honey
1/2 cup applesauce
2 eggs, beaten
3 bananas, mashed
Instructions
Preheat oven to 350 F and grease a 9x5 inch loaf pan. In a large bowl, combine flour, baking soda, and salt. In a separate bowl, mix applesauce and honey. Combine eggs and bananas into the applesauce mixture. until well blended. Stir banana mixture into the flour mixture just enough to moisten. Pour batter into prepared loaf pan. Bake for 50 to 60 minutes or until a toothpick inserted into the center of the loaf comes out clean. Remove bread from oven and let cool on a wire rack for 10 minutes. Remove bread from pan and continue cooling on wire rack. Yields 12 servings.
