Homestyle Chicken Tender Bake
This resembles a KFC Famous Bowl. Can use grilled chicken instead of chicken tenders, and can use beef gravy as opposed to the chicken gravy. Triple the recipe to fill a 12x24 buffet pan.
1 pound Chicken Tenders, cooked
24 ounces mashed potatoes
12 ounces chicken gravy
16 oz can corn, drained
1 1/2 cups Colby Jack cheese, shredded
2 tablespoons fresh chives, finely chopped
Preheat oven to 400 F. Cut chicken into bite-size pieces. Grease a 9x13 inch baking pan. Spread the potatoes evenly over the bottom of the pan. Top with chicken, gravy and then corn, distributing them evenly over the potatoes. Cover with foil and bake for 30-35 minutes. Remove from oven and uncover. Sprinkle with cheese and return to oven for 3-4 minutes or until cheese melts. Remove from oven and top with chives. Makes 12 servings.
