Cheesy Shrimp and Grits Casserole
Ingredients
4 cups chicken broth
1/2 tsp salt
1 cup grits
1 cup Cheddar Cheese, shredded, divided
1 cup Monterey Jack Cheese, shredded
2 tbsp butter
6 green onions, chopped
1 green bell pepper, chopped
1 garlic clove, minced
1 lb shrimp, peeled and cooked
10 oz can Ro-Tel Tomatoes
1/4 tsp coarse salt
1/4 tsp black pepper
Instructions
Bring 4 cups chicken broth and 1/2 tsp salt to a boil in a large saucepan. Stir in grits, cover, reduce heat and simmer 20 minutes. Preheat oven to 350 F. Grease a 9 x 13 inch baking dish. Mix 3/4 cup Cheddar Cheese and Monterey Jack Cheese in with grits mixture. Melt butter in large skillet over medium heat. Add green onions, bell pepper and minced garlic to skillet. Saute 5 minutes or until tender. Stir vegetable mixture into grits mixture. Add shrimp, tomatoes, salt and pepper to grits mixture. Pour into prepared dish and sprinkle top with 1/4 cup Cheddar Cheese. Bake for 30 to 35 minutes. Makes 12 servings.
