Bessie’s Hot Rolls
This was the recipe my grandmother Bessie Kestler Graham used to make her rolls. As kids we would slather them in butter and honey, only making these rolls taste even better.
Ingredients
2 1/4 teaspoons Active Dry Yeast
2 tablespoons cold water
4 tablespoons shortening
1/3 cup sugar
1 teaspoon salt
1 cup boiling water
1 cup cold water
5 cups all purpose flour
Instructions
Put yeast in a cup and pour cold water over yeast. Stir until yeast is dissolved and set aside. Cream together shortening, sugar, and salt in mixing bowl. Add the boiling water, stirring until shortening has melted. Let cool for 20 minutes or until shortening begins to harden. Add yeast to mixture, then rinse cup with 1 cup of cold water, adding to the mixture. Add flour to the mixture, blending well. Cover with plastic wrap and put in refrigerator. We normally make the dough the night before we are going to use it, and let it rest overnight. Use as desired to make rolls of your choice, Parker House, clover leaf, etc. Grease the pan(s) with cooking spray or shortening, and cover with plastic wrap sprayed with non stick cooking spray. Let rise for 2 to 3 hours, and bake at 400 F until done.
