S'More Jumbo Muffins
Ingredients
1 1/2 cups flour
1/2 cup Graham Cracker Crumbs
1/4 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1 egg
1 1/2 cups buttermilk
1/4 cup vegetable oil
3/4 cup chocolate chips
1 1/4 cups miniature marshmallows, divided
Instructions
Preheat oven to 375 F and grease a jumbo muffin tin. In a large bowl, combine the dry ingredients. In a separate bowl, combine, egg, buttermilk and oil and mix well. Stir into dry ingredients until just moistened. Fold in chocolate chips and 1 cup marshmallows. Divide batter evenly among cups, filling each one about 3/4 full. Sprinkle muffins with remaining marshmallows, about 5 per muffin. Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan into a wire rack. Serve warm. Makes 6 servings.
