Marinated Roast Beef
Ingredients
8 pounds of Rump Roast
1 cup vegetable oil
3/4 cup soy sauce
1/2 cup lemon juice
1/4 cup Worcestershire Sauce
1/4 cup mustard
30 cloves of garlic, cut in half
1 tablespoon black pepper
Instructions
Pierce roast at 1-inch intervals with a meat fork, and place in a large sealable container. Combine oil. soy sauce, lemon juice, Worcestershire sauce, mustard, and garlic cloves and pour over roast. Seal and chill for 24 to 48 hours, turning occasionally. Remove roast from marinade and discard marinade. Place roast on a lightly greased rack in a broiler pan and sprinkle with black pepper. Bake at 325 F for 1 hour and 50 minutes to 2 hours or until internal temperature reaches 160 F. Let stand 5 minutes before slicing. Serves 16.
