Quick Fish Fillets
Ingredients
4 6 oz fish fillets
1/4 cup fine breadcrumbs
1 teaspoon fresh parsley, chopped
1/2 teaspoon paprika
1/4 cup low fat plain yogurt
1 teaspoon dry mustard
Instructions
Preheat oven to 350 F. Line a baking sheet with parchment paper or coat with non stick cooking spray. Combine breadcrumbs, parsley and paprika in a shallow dish. Combine yogurt and mustard in a shallow dish. Brush fish fillets with yogurt mixture, dredge in breadcrumb mixture and then place on prepared pan. Bake for 15 to 20 minutes or until fish flakes easily and tests done. Makes 4 servings.
