School Lunch Peanut Butter Bars
These are amazing.
Ingredients
1 1/2 cup flour
1 1/4 teaspoon salt
1/2 teaspoon baking soda
3/4 cup butter
3/4 cup brown sugar
1 1/2 teaspoon vanilla extract
1 1/2 cup creamy peanut butter, divided
2 eggs
1 1/2 cup quick oats
1/2 cup butter
1/4 cup milk
2 tablespoons cocoa powder
1 teaspoon vanilla extract
3 1/2 cups powdered sugar
Instructions
Preheat oven to 350 F and grease an 11 x 15-inch jelly roll pan. In a small mixing bowl, combine flour, salt, and baking soda. In a large mixing bowl, cream together butter, sugars, vanilla, 3/4 cup peanut butter, and eggs until light and fluffy. Gradually add flour mixture, just until combined. Stir in the oats. Spread into prepared pan, and bake for 12 to 15 minutes or until golden brown. Cool for 10 minutes. Whip the remaining peanut butter until it becomes light and fluffy. Carefully spread the whipped peanut butter over the cooled pan cookie. Add butter to a small saucepan and melt. Add the milk and cocoa powder. Cook over medium heat, stirring constantly, just until the boiling point. Remove from heat and add vanilla. Gradually add the powdered sugar to the cocoa mixture, stirring until thickened. Pour over the peanut butter, and gently spread over the cookie. Cool completely and slice into bar cookies. Makes 24 servings.
