Baked Catfish Parmesan
Ingredients
1 pound skinless catfish fillets
1/2 cup dry bread crumbs
1/4 grated Parmesan cheese
2 tablespoons chopped parsley
1/2 teaspoon paprika
1/4 teaspoon oregano
1/4 teaspoon basil
2 teaspoons black pepper
1/3 cup milk
2 teaspoons vegetable oil
Instructions
Preheat oven to 450 F. Spray baking pan with nonstick coating and set aside. Combine bread crumbs, Parmesan cheese and seasonings in a medium bowl. Dip fillets in milk and then roll in crumb mixture. Arrange fish on baking pan, then drizzle oil over fish. Bake for 10-12 minutes or just until fish flakes easily. If fillets are thick, you may need to increase bake time in order to cook fish thoroughly. Yields 4 servings.
