Maple Teriyaki Salmon Fillets
1/3 cup apple juice
1/3 cup maple syrup
3 tablespoons soy sauce
2 tablespoons finely chopped onion
2 cloves garlic, finely minced
4 salmon fillets, about 2 pounds
In a small bowl, combine apple juice, syrup, soy sauce, onion and garlic. Remove 1/2 cup for basting, cover and refrigerate. Place remaining marinade in a large resealable bag and add salmon. Seal bag, turn to coat and refrigerate for 3 hours. Drain and discard marinade. Broil salmon 4" from heat for 5 minutes, baste with reserved marinade, broil salmon 10 minutes longer or until fish flakes easily with a fork. Can also bake at 350 F for 25-30 minutes or even grill.
